Rhubarb! What to do with it?

It’s that time of year! The Rhubarb is coming up in droves and people are giving them away! A perennial, that comes back every single year in the same spot! And in abundance it grows! April and May are a great time to gather up all the rhubarb you can, and you are able to cook it right away or chop it up and freeze it so you can have rhubarb all year round. But what is it good for and how do you eat it? According to Organic Facts, rhubarb has many nutrient dense minerals for the human body. Loaded with fiber, protein, vitamin C, K, B complex, calcium, potassium, and magnesium; rhubarb is really good for you! Heart, digestion, and blood circulation are just some of the many health benefits you obtain through eating rhubarb. Well, this is all so great, but how do you eat rhubarb? Some people have been known to pick the stalk and eat it raw.. oh so tart that must be! And others would do the same, but sprinkle sugar on it! I don’t think that is something I could do, but I will give you the best Rhubarb Oat Bars Recipe I found on Pinterest, from a pretty Life in the Suburbs! (I edited slightly)

Preparing the rhubarb:

4 cups chopped rhubarb

½ cup sugar (I used organic cane sugar or coconut sugar)

1 tbsp water

Generous squeeze of lemon juice

 

Put all ingredients on the stove over low-medium heat until rhubarb is soft yet chunky.

 

Preparing the oat bar:

 

1 ¼ cup flour

1 ¼ cup quick oats

2/3 cup sugar (optional)

¼ tsp salt

½ cup butter, melted

 

Mix dry goods. Melt butter, add to try mixture. Put ¾ of mixture in a prepared 9 x 9 in baking pan lined with parchment paper.

 

Once rhubarb mixture is done pour on top of the oat bar mixture in pan. Sprinkle the rest of the oat bar mixture that was set aside on top of the rhubarb. Then sprinkle with cinnamon and sugar mix. Bake at 350 degrees for 1 hour. Take out and let cool. Eat and enjoy!
